- Strawberries – 500 grams (fresh)
- Heavy Cream – 2 cups
- Whole Milk – 1 cup
- Sugar – 2/3 cup
First take the strawberries in a deep bowl and wash them thoroughly. Trim the strawberries and slice it into thin long pieces. You will need
- Coconut Milk – 2 cans
- Sugar – 1 cup
- Egg Yolks – 6
- Kosher Salt – ½ teaspoon
- Vanilla Extract – 2 teaspoons
Take 1 can of coconut milk and mix it with brown sugar and salt. Bring it to boil and keep stirring until the sugar gets dissolved. Once the mixture is boiled, reduce the heat and cook it for the next 20-30 minutes until the mixture gets reduced and is darkened. The mixture should in fact look like caramel. Once the mixture resembles more like a caramel, add the second can of coconut milk to this mixture and stir well.
Now beat the egg yolks and whisk it with around one cup of the hot caramel mixture. The next step is to turn the heat to low and add the tempered yolks into the saucepan. Cook the mixture for the next 2 minutes. Do not forget to keep stirring regularly, as the mixture thickens remove the pan from the heat and pour it into a bowl. To this mixture add the vanilla extract. Now you need to cover the owl tightly and refrigerate it until it gets completely cool.
The next step is to pour the mixture into an ice cream maker and process according to the manufacturer’s instructions. Freeze it for at least and then you can serve it.
