A popular Gujarati recipe, you can have Khandvi as an evening snack or a light dinner.


  • Besan / Chick Pea Flour – 60 gm
  • Yogurt – 60 gm (it has to be Sour in taste)
  • Ginger Paste - half teaspoon
  • Green Chili Paste - half teaspoon
  • Red Chili Powder – half teaspoon
  • Turmeric Powder - 1/8th teaspoon
  • Heeng Powder/ Asafoetida - 1/8th teaspoon
  • Water – 375 ml
  • Salt – as per your taste

For Tempering

  • Mustard Seeds – ½ teaspoon
  • Dried whole Red Pepper – 2 nos
  • Coconut (Grated) – ½ cup
  • Coriander Leaves – 1 tablespoon (finely chopped)
  • Curry Leaves – 4-5


Take a deep, heavy based pan and place the flour in it. To this add the ginger paste, green chili paste, heeng powder, red chili powder and salt. Mix them well. Now add the sour yoghurt to the bowl and form a smooth paste. Keep in mind to avoid lumps while mixing all the ingredients. Now add water to this paste and mix it very well always keeping in mind to pop all the bubbles.

Place this pan on high heat and bring it to bow. Keep stirring the mixture in order to avoid scorching. Do this until the paste gains an even consistency. One best way to test the right consistency of the mixture is by spreading a teaspoon of the batter on an ungreased surface. If after cooling, the batter comes off, then it has reached the appropriate consistency needed.

Once the mixture is cooked, use a rubber spatula and spread it on an ungreased surface in as thin layer as possible. Once this is done, leave it to cool down.

While the layers are cooling down, you can prepare the tempering. Heat the oil and crackle the mustard seeds, now add the curry leaves and red pepper to the oil. Stir it till the leaves turn light golden in color and the pepper leaves a pungent smell. To this add the coriander leaves and grated coconut. Make it a point to keep aside 1 teaspoon of grated coconut as well as coriander leaves aside.

Now you need to spread the tempering on the flour layers evenly. Once this is done, cut the layers into strips and roll them up like a scroll. See to it that the layers are rolled firmly, at the same time they do not break away.

Khandvi is ready! Arrange the scrolls on a serving dish and garnish it with the remaining coriander leaves and grated coconut. You can serve it with chili and tomato sauce.

Bardoli Khichdi


Next is the recipe of Bardoli Khichdi – this is rice cooked perfectly with vegetables and has the flavors of raw mango and spices. Here is how you can cook it:


  • Rice – 2 cups
  • Toor Dal – 1.5 cups
  • Green peas – 250 gms
  • Potatoes – 3 to 4 (Cubed)
  • Onions – 2 (Finely chopped)
  • Ginger – ½ inch (Chopped)
  • Green Chilies – 2 to 3 (Slit in the middle)
  • Raw Mango – 1 (Finely chopped)
  • Jeera Seeds – 1 teaspoon
  • Mustard seeds – 1 teaspoon
  • Red Chili Powder – 1 teaspoon
  • Turmeric Powder – 1 teaspoon
  • Heeng Powder / Asafoetida – 1 pinch
  • Ghee
  • Coriander – Finely chopped
  • Sugar - 1 teaspoon
  • Salt – As per taste


Take a large pot and heat 1 teaspoon ghee in it. Now add cumin seeds to the ghee and fry it for 2 minutes. Once it turns light golden in color, add chopped onion to it and sauté till it turns brown in color. To this add ginger and green chilies. Fry it for another 5 minutes. Now you need to add turmeric powder and red chili powder to the pan and let it cook until the ghee separates from the mixture. This will take some time.

Once the ghee is separated add potatoes, washed rice and dal to the pot. Saute this for at least 5 minutes. Once sautéed, you can add green peas, raw mango, heeng powder, salt and sugar. Now add 4 cups of water to the pot and let it simmer for at least 20 to 25 minutes.

Once the rice and dal is cooked, take it off the flame. Garnish it with fresh coriander and 2 tablespoons of ghee. Serve hot.

Aam Shrikhand with Mango Salad


Gujarati cuisine is well known for its sweet dishes. So here is the recipe of the tempting Aam Shrikhand with Mango Salad. To prepare this you will need:


  • Hung Yoghurt – 2 cups
  • Fresh Mangoes – 300 gm
  • Fresh Cream – 1/4th Cup
  • Condensed Milk – 2 Tins
  • Sugar – ½ Cup
  • Saffron – ½ teaspoon
  • Green Cardamom powder - 2 teaspoon
  • Chaat Masala - 2 teaspoon
  • Pistachio – 80 gm (unsalted, peeled)
  • Mint – 20 gm
  • Lemon – 1 (juice, remove the seeds)

Mix the hung curd with saffron, condensed milk, chopped mangoes, sugar, cardamom powder and cream. Leave it to chill.
