Lentil Chickpea Burgers

Ingredients

  • Olive oil - 3 tbsp
  • Chopped onion - 1
  • Garlic cloves - 2
  • Cumin powder - 1 tsp
  • Lentils - 1 can
  • Chickpeas - 1 can
  • Sesame seeds - 1 tbsp
  • Chopped parsley - 2 tbsp
  • Beaten egg - 1
  • Breadcrumbs - 2 cups
  • Cheese - 2 cups
  • Salt and pepper to taste
  • Buns and topping sauces as required

Method

Heat 1 tbsp oil in a frying pan. Add onion and cook till tender. Add garlic, cumin, pepper and cook for half a minute. Turn off the gas.

Put lentils and chickpeas in a blender and grind till a coarse texture. Add the onion mixture, sesame seeds and parsley, and blend again until smooth. Place this mixture in a large bowl. Add to it the beaten egg, breadcrumbs and cheese. Mix well and add salt and pepper.

Make patties of this mixture and fry till golden brown. Toast the buns and place the patties in between. Top it with your favourite sauces.

Panzanella

Ingredients

  • Bread - 21 slices
  • Olive oil - 6 tbsp
  • Minced garlic cloves - 2
  • Vinegar - 2 tbsp
  • Chopped parsley - 2 tbsp
  • Chopped tomatoes - 6
  • Onion - 1
  • Chopped cucumber - ½
  • Sliced celery ribs - 2
  • Basil leaves - 12
  • Black olives (halved) - ½ cup
  • Salt and pepper to taste

Method

Place bread slices together in a preheated oven and cook for 2 minutes. Remove from oven and let it cool. Tear the bread slices into small pieces and keep aside.

In a bowl, prepare dressing by combining oil, garlic cloves, vinegar, parsley, salt and pepper.

In another bowl, combine bread pieces, tomatoes, onion, cucumber, celery, basil and olives. Add the dressing and toss together. Your panzanella is ready!

Sautéd Eggplant and Mozzarella

Ingredients

  • Eggplants (small and thin) - 4
  • Crushed garlic cloves - 1
  • Chopped parsley - 1 tbsp
  • Breadcrumbs - ½ cup
  • Olive oil - 3 tbsp
  • Chopped cheese slices - 200 grams
  • Chopped basil leaves - 1 tbsp
  • Salt and pepper to taste

Method

Preheat oven to 375F.

In the meantime, cut eggplants into half lengthwise and make cuts into the flesh of the eggplants without slicing all the way through the skin. Place skin side down in a shallow pan.

In a bowl, combine garlic, parsley, breadcrumbs, 2 tbsp oil, salt and pepper. Spread this mixture on the top of the eggplants by pressing lightly. Drizzle the remaining oil over the pan and bake for 10 to 12 minutes, until golden brown. Remove from the oven and top with cheese slices. Put it back in the oven and bake for 5 more minutes until cheese melts. Sprinkle chopped basil on top and serve hot.

Green Bean and Egg Salad

Ingredients

  • Minced onion - 1
  • Cheese - 120 grams
  • Buttermilk - 1/4 cup
  • Vinegar - 2 tbsp
  • Olive oil - 1 tbsp
  • Mustard seeds - 2 tsp
  • Sliced potatoes - 500 grams
  • Eggs - 4
  • Chopped green beans - 225 grams
  • Green salad mixed - 8 cups
  • Sliced tomatoes - 1 

Method

In a blender, combine onion, cheese, buttermilk, vinegar, oil, mustard seeds, salt and pepper. Blend until smooth.

Cook potatoes in a pot of salted water until tender, which will take around 15 minutes. Drain the water and pat them dry. Meanwhile, boil eggs in another pot. Peel and slice the eggs. Also, boil green beans and cook for 5 minutes. Drain the water and pat them dry too.

Now, in a large bowl, combine the green salad, green beans and half of the dressing. Top with potatoes, tomato and egg slices. Drizzle over the remaining dressing and your delicious and healthy 'Green Bean and Egg Salad' is ready!
