Pepperoni Pizza Pocket



  • Olive oil – 1 tbsp
  • Onion (diced) – 1/2
  • Garlic (minced) – 1 clove
  • Tomato purée – 1 tbsp
  • Tomatoes (diced) – 3 ½ cups
  • Sugar – ½ tsp
  • Salt – to taste
  • Black pepper – to taste
  • Fresh basil leaves - 4
  • Pizza dough – ½ kg
  • Mozzarella cheese (shredded) – 2 cups
  • Pepperoni (thinly sliced) – ½ cup
  • Parmesan cheese - to taste


Preheat the oven to 200°C.

Heat the olive oil in a small pan. Add the onions and sauté until translucent. Add garlic and continue to sauté for a minute or so. Add in the tomato puree and sauté for 2 minutes. Stir in the diced tomatoes, sugar, salt and pepper. Add the basil leaves and bring to a simmer. Let it cook for about 15 minutes and keep aside.

Meanwhile, divide the pizza dough into 4 equal parts. Roll them out one by one into a round shape. On one half of each round, place some mozzarella cheese and place some pepperoni slices on it. Now, fold the diskette in half, covering the filling and then seal the edges by crimping it with your fingers. Your pocket is ready to be baked.

Place the pockets on a baking sheet, brush them with olive oil and sprinkle some grated Parmesan cheese over it. Bake for 10-15 minutes, until golden brown. Serve hot with the sauce on the side.

Hummus and Grilled Vegetable Wrap



  • Courgettes (cut lengthwise into ½ cm slices) - 2
  • Olive oil – 2 tbsp
  • Salt – to taste
  • Black pepper – to taste
  • Bread wraps (about 23cm diameter) – 4
  • Hummus – 250 gms
  • Toasted pine nuts – 25 gms
  • Baby spinach leaves – 55 gms
  • Red pepper (seeded and thinly sliced) – 1
  • Onion (thinly sliced) – 50 gms
  • Fresh mint leaves (finely chopped) – 25 gms


Preheat the barbecue grill on medium heat.

Brush the courgette slices with olive oil and sprinkle them with salt and black pepper. Cook them for 4 minutes until they become tender and slightly brownish in colour.

Spread hummus over a bread wrap and place pine nuts over it. Lay three slices of courgette, some spinach, few pieces of red pepper and few slices of onion on top. Sprinkle some mint over it, roll it up, cut in half diagonally and serve.
